Yogurt Naan

On Sunday I made stuffed naan bread made with Yogurt from Vegetarian Cooking for Everyone, http://www.amazon.com/gp/reader/0767927478/ref=sib_dp_pt#reader-link . I stuffed the naan with a mixture of peas and tofu paneer, a fake cheese I make by throwing tofu, sunflower seeds, nutritional yeast, olive oil and garlic into the food processor. These tasty breads make a great pairing with those super easy Indian Fare meals from Trader Joe's.

I also decided that this bread recipe would make great homemade veggie Runzas! For those of you not originally from Nebraska or Iowa, a Runza is a little loaf of bread stuffed with seasoned ground beef, cabbage, and onions. They were my FAVORITE thing when I still ate meat.
